Ingredients
  • 500 gram Tomatoes
  • 2 piece Red Bell Pepper
  • 1 piece Onion
  • 3 clove Garlic
  • 2 cup Vegetable Stock
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 10 leaves Fresh Basil
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until softened, about 5 minutes.
  2. Add chopped tomatoes and red bell peppers to the pot. Cook for another 5 minutes.
  3. Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  5. Season with salt and black pepper to taste.
  6. Serve hot, garnished with fresh basil leaves.
