Ingredients
  • 4 cup Tomatoes
  • 1 teaspoon Ginger
  • 1 medium Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Add grated ginger and cook for another minute.
  3. Add chopped tomatoes and cook for 5 minutes, stirring occasionally.
  4. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Use an immersion blender or transfer the mixture to a blender and blend until smooth.
  6. Return the soup to the pot, stir in coconut milk, salt, and black pepper. Simmer for another 5 minutes.
  7. Serve hot, garnished with fresh cilantro.
