Ingredients
  • 1 cup Split red lentils
  • 2 large Tomatoes
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 1 teaspoon Ginger
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Red chili powder
  • 4 cups Vegetable broth
  • 1 tablespoon Lemon juice
  • 2 tablespoon Fresh cilantro
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 tablespoon Olive oil
Instructions
  1. Rinse the lentils and set aside.
  2. Heat olive oil in a large pot over medium heat.
  3. Add chopped onions, minced garlic, and grated ginger. Sauté until onions are translucent.
  4. Add turmeric powder, cumin powder, coriander powder, and red chili powder. Stir well.
  5. Add chopped tomatoes and cook until they soften.
  6. Add rinsed lentils and vegetable broth. Bring to a boil.
  7. Reduce heat, cover, and simmer for 20-25 minutes or until lentils are cooked.
  8. Use an immersion blender or blend in batches in a regular blender until smooth.
  9. Season with salt, black pepper, and lemon juice. Stir well.
  10. Simmer for another 5 minutes.
  11. Garnish with fresh cilantro.
  12. Serve hot and enjoy!
