Ingredients
  • 1 can Tomatoes
  • 1 can Black beans
  • 1 cup Barley
  • 1 medium Onion
  • 2 minced Garlic cloves
  • 1 medium Carrot
  • 2 chopped Celery stalks
  • 4 cup Vegetable broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 2 chopped Fresh cilantro
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, and celery. Cook until vegetables are softened, about 5 minutes.
  2. Add cumin, paprika, salt, and black pepper. Stir well.
  3. Add tomatoes, black beans, barley, and vegetable broth. Bring to a boil.
  4. Reduce heat to low and simmer for 30 minutes, or until barley is tender.
  5. Remove from heat and let it rest for 5 minutes.
  6. Serve hot, garnished with fresh cilantro.
