Ingredients
  • 800 gram Tomatoes
  • 1 cup Basil leaves
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Sugar
Instructions
  1. Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic, sauté until translucent.
  2. Add chopped tomatoes, vegetable broth, salt, black pepper, and sugar. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Remove from heat and let it cool slightly.
  4. Transfer the soup to a blender or use an immersion blender to puree until smooth.
  5. Return the soup to the pot and reheat if necessary.
  6. Stir in chopped basil leaves and let it simmer for an additional 5 minutes.
  7. Serve hot and garnish with additional basil leaves if desired.
