Ingredients
  • 4 cup Tomatoes
  • 1 cup Basil leaves
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until onion is translucent.
  2. Add tomatoes, vegetable broth, basil leaves, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Use an immersion blender or transfer the soup to a blender, and blend until smooth.
  4. Return the soup to the pot and simmer for an additional 10 minutes.
  5. Serve hot and garnish with fresh basil leaves. Enjoy!
