Ingredients
  • 2 can Tomatoes
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 4 cup Vegetable broth
  • 1 cup Basil leaves
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Chop the onions and mince the garlic cloves.
  2. In a pan, heat the olive oil and sauté the onions and garlic until translucent.
  3. Transfer the sautéed onions and garlic to the crockpot.
  4. Add the canned tomatoes, vegetable broth, basil leaves, salt, and black pepper to the crockpot.
  5. Stir well and cook on low heat for 4 hours.
  6. After 4 hours, use an immersion blender to blend the soup until smooth.
  7. Let the soup rest for 10 minutes before serving.
  8. Serve hot and garnish with fresh basil leaves.
