Ingredients
  • 4 cup Tomatoes
  • 4 tablespoon Basil Leaves
  • 1 medium Onion
  • 2 clove Garlic Cloves
  • 2 cup Vegetable Stock
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Heavy Cream
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic, sauté until onions are translucent.
  2. Add chopped tomatoes, vegetable stock, basil leaves, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a blender and blend in batches.
  4. Stir in heavy cream and let the soup simmer for another 5 minutes.
  5. Serve hot and garnish with fresh basil leaves.
