Ingredients
  • 500 gram Tomatoes
  • 1 medium-sized Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 3 tablespoon Basil leaves
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Cream (optional)
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  2. Add diced tomatoes and vegetable broth to the pot. Bring to a boil and then reduce heat to simmer for 20 minutes.
  3. Remove from heat and let the soup cool slightly. Using an immersion blender, blend the soup until smooth.
  4. Return the soup to the heat and add chopped basil leaves. Season with salt and black pepper. Simmer for another 5 minutes.
  5. Optional: Stir in cream for a creamier texture.
  6. Serve hot and garnish with fresh basil leaves. Enjoy!
