Ingredients
  • 500 gram Tomatoes
  • 300 gram Apples
  • 1 piece Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 10 gram Fresh basil leaves
  • 2 tablespoon Cream (optional)
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic. Sauté until onions are translucent.
  2. Add diced tomatoes and apples to the pot. Stir well and cook for 5 minutes.
  3. Pour in the vegetable broth and season with salt and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Remove from heat and let the soup cool slightly. Blend the soup until smooth using an immersion blender or regular blender.
  5. Return the soup to the pot and reheat if necessary. Stir in fresh basil leaves.
  6. Serve hot and garnish with a drizzle of cream if desired.
