Ingredients
  • 200 gram Tofu
  • 100 gram Almond flour
  • 100 gram Oat flour
  • 4 teaspoon Maple syrup
  • 2 teaspoon Coconut oil
  • 2 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
  • 1 cup Blueberries
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. In a blender, combine tofu, almond flour, oat flour, maple syrup, coconut oil, baking powder, vanilla extract, and salt. Blend until smooth.
  3. Gently fold in blueberries.
  4. Pour the batter into a greased muffin tin.
  5. Bake for 25 minutes or until golden brown.
  6. Allow the muffins to cool for 5 minutes before removing them from the tin.
  7. Serve and enjoy!
