Ingredients
  • 1 cup Barley
  • 1 cup Cherry tomatoes
  • 1 cup Cucumber
  • 1 small Red onion
  • 0.5 cup Fresh parsley
  • 2 tablespoon Lemon juice
  • 3 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Rinse the barley under cold water. In a saucepan, bring 2 cups of water to a boil and add the barley. Reduce heat, cover, and simmer for 20-25 minutes or until tender. Drain any excess water.
  2. While the barley is cooking, prepare the vegetables. Cut the cherry tomatoes in half, dice the cucumber, and finely chop the red onion and fresh parsley.
  3. In a large bowl, combine the cooked barley, cherry tomatoes, cucumber, red onion, and fresh parsley.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss to combine.
  5. Let the salad rest for 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.
