Ingredients
  • 1 cup Forbidden black rice
  • 1 medium Red bell pepper
  • 1 medium Cucumber
  • 2 medium Carrots
  • 1 bunch Green onions
  • 1 bunch Fresh cilantro
  • 0.5 cup Cashews
  • 0.5 cup Dried cranberries
  • 1 juice of Lime
  • 2 tablespoon Extra virgin olive oil
  • 1 tablespoon Honey
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Ground cumin
Instructions
  1. Cook the forbidden black rice according to the package instructions.
  2. Meanwhile, chop the red bell pepper, cucumber, carrots, green onions, and cilantro.
  3. In a large bowl, combine the cooked black rice, chopped vegetables, cashews, and dried cranberries.
  4. In a small bowl, whisk together the lime juice, olive oil, honey, salt, black pepper, and ground cumin to make the dressing.
  5. Pour the dressing over the rice mixture and toss until well coated.
  6. Let the salad rest for 10 minutes to allow the flavors to meld.
  7. Serve chilled and enjoy!
