Ingredients
  • 4 ear(s) Corn on the cob
  • 1 cup(s) Red cabbage
  • 1 medium Carrot
  • 1 small Red onion
  • 0.5 cup(s) Cilantro
  • 2 juice of Lime
  • 2 tablespoon(s) Olive oil
  • 0.5 teaspoon(s) Salt
  • 0.5 teaspoon(s) Black pepper
Instructions
  1. Preheat the grill to medium-high heat.
  2. Grill the corn on the cob, turning occasionally, until charred and tender, about 10 minutes.
  3. Remove the corn from the grill and let it cool slightly. Once cool enough to handle, cut the kernels off the cob and transfer them to a large bowl.
  4. Finely shred the red cabbage and julienne the carrot. Thinly slice the red onion and chop the cilantro.
  5. Add the shredded cabbage, julienned carrot, sliced red onion, and chopped cilantro to the bowl with the corn.
  6. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper. Pour the dressing over the corn slaw and toss to combine.
  7. Let the slaw sit for at least 10 minutes to allow the flavors to meld. Serve chilled.
