  • 500 gram Potatoes
  • 500 gram Parsnips
  • 2 teaspoon Olive Oil
  • 4 sprig Fresh Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Peel and cut the potatoes and parsnips into similar sized pieces.
  3. Place the potatoes and parsnips in a large roasting pan.
  4. Drizzle with olive oil and sprinkle with salt, black pepper, and fresh thyme leaves.
  5. Toss everything together until well coated.
  6. Roast in the preheated oven for 40-45 minutes, or until the potatoes and parsnips are golden and crispy.
