Ingredients
  • 2 cup Butternut Squash
  • 2 cup Corn
  • 1 cup Black Beans
  • 1 medium Onion
  • 3 clove Garlic
  • 4 cup Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 2 tablespoon Olive Oil
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, and sauté until softened.
  3. Add butternut squash, corn, black beans, cumin, chili powder, salt, and pepper to the pot.
  4. Stir well to combine all ingredients.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat to low, cover the pot, and simmer for 45 minutes, or until the vegetables are tender.
  7. Remove from heat and let it rest for 10 minutes.
  8. Serve hot and enjoy!
