Ingredients
  • 300 gram Spinach
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Potato
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Coconut milk
  • 1 tablespoon Lemon juice
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until fragrant.
  3. Add diced potato and cook for 5 minutes.
  4. Add vegetable broth and bring to a boil.
  5. Reduce heat to low and simmer for 15 minutes, or until potato is tender.
  6. Add spinach and cook until wilted.
  7. Use an immersion blender to puree the soup until smooth.
  8. Stir in coconut milk, lemon juice, salt, and black pepper.
  9. Cook for an additional 5 minutes.
  10. Serve hot and enjoy!
