Ingredients
  • 200 gram Fresh spinach leaves
  • 1 cup Lychee
  • 1 cup Mango
  • 1 small Red onion
  • 1 cup Cherry tomatoes
  • 0.5 cup Toasted almonds
  • 2 tablespoon Fresh mint leaves
  • 2 tablespoon Fresh cilantro leaves
  • 2 tablespoon Lime juice
  • 1 tablespoon Olive oil
  • 1 tablespoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
Instructions
  1. In a large bowl, combine the fresh spinach leaves, sliced red onion, halved cherry tomatoes, and toasted almonds.
  2. In a blender, combine the lychee, mango, mint leaves, cilantro leaves, lime juice, olive oil, honey, salt, and black pepper. Blend until smooth.
  3. Pour the lychee mango dressing over the spinach salad and toss gently to coat.
