  • 8 ounce Rice Noodles
  • 4 cup Vegetable Broth
  • 1 cup Coconut Milk
  • 1 cup Carrots
  • 1 cup Bell Peppers
  • 1 cup Zucchini
  • 1 cup Mushrooms
  • 1 cup Green Beans
  • 2 tablespoon Lime Juice
  • 2 tablespoon Soy Sauce
  • 1 teaspoon Ginger
  • 2 clove Garlic
  • 1 teaspoon Red Chili Flakes
  • 2 tablespoon Cilantro
  • 2 tablespoon Scallions
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
Instructions
  1. In a large pot, bring water to a boil and cook the rice noodles according to the package instructions. Drain and set aside.
  2. In the same pot, heat vegetable broth and coconut milk over medium heat.
  3. Add carrots, bell peppers, zucchini, mushrooms, and green beans to the pot. Cook until vegetables are tender.
  4. Stir in lime juice, soy sauce, ginger, garlic, and red chili flakes.
  5. Add cooked rice noodles to the pot and mix well.
  6. Season with salt and pepper.
  7. Serve hot, garnished with cilantro and scallions.
