Ingredients
  • 2 teaspoon Coconut oil
  • 3 clove Garlic
  • 1 teaspoon Ginger
  • 2 tablespoon Red curry paste
  • 2 cup Coconut milk
  • 1 cup Vegetable broth
  • 1 cup Carrots
  • 1 cup Green beans
  • 1 cup Bell peppers
  • 1 cup Zucchini
  • 1 cup Broccoli florets
  • 1 cup Tofu
  • 2 tablespoon Soy sauce
  • 2 tablespoon Lime juice
  • 1 tablespoon Brown sugar
  • 1 cup Fresh basil leaves
  • 1 teaspoon Salt
  • 4 cup Cooked rice
Instructions
  1. Heat coconut oil in a large pan over medium heat. Add garlic and ginger, sauté for 2 minutes.
  2. Add red curry paste and stir-fry for another minute.
  3. Pour in coconut milk and vegetable broth, bring to a simmer.
  4. Add carrots, green beans, bell peppers, zucchini, and broccoli florets. Cook for 10 minutes or until vegetables are tender.
  5. Stir in tofu, soy sauce, lime juice, brown sugar, fresh basil leaves, and salt. Cook for an additional 5 minutes.
  6. Serve the Thai vegetable curry over cooked rice.
