Ingredients
  • 300 gram Sweet potatoes
  • 200 gram Rice noodles
  • 1 cup Coconut milk
  • 2 teaspoon Red curry paste
  • 1 cup Vegetable broth
  • 2 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 20 gram Fresh cilantro
  • 30 gram Green onions
Instructions
  1. Peel and dice the sweet potatoes.
  2. Cook the rice noodles according to the package instructions.
  3. In a large pan, heat the coconut milk over medium heat.
  4. Add the red curry paste and stir-fry for 2 minutes.
  5. Add the sweet potatoes and vegetable broth, and simmer for 15 minutes or until the sweet potatoes are tender.
  6. Stir in the soy sauce, lime juice, sugar, and salt.
  7. Add the cooked rice noodles and toss to coat.
  8. Cook for an additional 5 minutes.
  9. Serve hot, garnished with fresh cilantro and green onions.
