  3. Brush the eggplant slices with oil and season with salt.
  4. Grill the eggplant slices for about 4-5 minutes per side, until charred and tender.
  5. Remove the eggplant from the grill and let it cool.
  6. Meanwhile, halve the cherry tomatoes and thinly slice the red onion.
  7. In a small bowl, combine the fish sauce, lime juice, sugar, minced garlic, and finely chopped Thai chili pepper.
  8. Toss the cherry tomatoes, red onion, cilantro, and mint leaves in the dressing.
  9. Once the eggplant has cooled, roughly chop it into bite-sized pieces.
  10. Add the chopped eggplant and roasted peanuts to the salad.
