Ingredients
  • 2 teaspoon Red Curry Paste
  • 2 cup Coconut Milk
  • 1 tablespoon Vegetable Oil
  • 3 clove Garlic Cloves
  • 1 teaspoon Ginger
  • 1 cup Red Bell Pepper
  • 1 cup Green Beans
  • 1 cup Carrot
  • 1 cup Broccoli Florets
  • 1 cup Tofu
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Lime Juice
  • 2 tablespoon Fresh Basil Leaves
  • 1 teaspoon Salt
  • 4 cup Cooked Jasmine Rice
Instructions
  1. Heat vegetable oil in a large pan over medium heat. Add garlic and ginger, sauté for 1 minute.
  2. Add red curry paste and stir-fry for another minute.
  3. Add red bell pepper, green beans, carrot, and broccoli florets. Stir-fry for 2-3 minutes until vegetables are slightly tender.
  4. Add tofu, coconut milk, soy sauce, brown sugar, lime juice, and salt. Stir well to combine.
  5. Reduce heat to low, cover the pan, and simmer for 15-20 minutes, stirring occasionally.
  6. Remove from heat and let it rest for 5 minutes.
  7. Serve Thai red curry with cooked jasmine rice. Garnish with fresh basil leaves. Enjoy!
