Ingredients
  • 200 gram Rice Noodles
  • 100 gram Carrots
  • 100 gram Cucumber
  • 100 gram Red Bell Pepper
  • 100 gram Bean Sprouts
  • 1 cup Fresh Cilantro
  • 1 cup Fresh Mint Leaves
  • 0.5 cup Roasted Peanuts
  • 1 piece Lime
  • 2 clove Garlic
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Honey
  • 1 piece Red Chili Pepper
Instructions
  1. Cook the rice noodles according to the package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked noodles, carrots, cucumber, red bell pepper, bean sprouts, cilantro, and mint leaves.
  3. In a small bowl, whisk together the lime juice, minced garlic, soy sauce, sesame oil, honey, and chopped red chili pepper.
  4. Pour the dressing over the noodle mixture and toss well to combine.
  5. Garnish with roasted peanuts.
  6. Let the salad rest for 5 minutes before serving.
  7. Serve chilled and enjoy!
