Ingredients
  • 200 gram Rice Noodles
  • 100 gram Carrots
  • 100 gram Cucumber
  • 100 gram Red Bell Pepper
  • 20 gram Fresh Mint Leaves
  • 20 gram Fresh Cilantro Leaves
  • 30 gram Roasted Peanuts
  • 1 piece Lime
  • 2 clove Garlic
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Honey
  • 1 piece Red Chili
Instructions
  1. Cook the rice noodles according to the package instructions. Drain and rinse with cold water.
  2. Julienne the carrots, cucumber, and red bell pepper.
  3. Finely chop the fresh mint leaves, cilantro leaves, roasted peanuts, and garlic.
  4. In a small bowl, whisk together the lime juice, soy sauce, sesame oil, honey, and minced red chili.
  5. In a large bowl, combine the cooked rice noodles, julienned vegetables, chopped herbs, and dressing. Toss well to coat.
  6. Let the salad rest for 10 minutes to allow the flavors to meld.
  7. Serve the Thai Noodle Salad garnished with extra chopped herbs and roasted peanuts.
