Ingredients
  • 2 cup Green cabbage
  • 2 medium Carrots
  • 1 medium Red bell pepper
  • 1 cup Fresh cilantro
  • 0.5 cup Roasted peanuts
  • 2 tablespoon Lime juice
  • 2 tablespoon Soy sauce
  • 1 tablespoon Honey
  • 1 clove Garlic
  • 1 small Red chili pepper
  • 0.5 teaspoon Salt
  • to taste Pepper
Instructions
  1. Shred the green cabbage and carrots.
  2. Thinly slice the red bell pepper.
  3. Chop the fresh cilantro.
  4. In a large bowl, combine the shredded cabbage, carrots, sliced bell pepper, and chopped cilantro.
  5. In a small bowl, whisk together the lime juice, soy sauce, honey, minced garlic, chopped red chili pepper, salt, and pepper.
  6. Pour the dressing over the vegetables and toss to coat.
  7. Let the coleslaw rest in the refrigerator for at least 30 minutes.
  8. Before serving, sprinkle roasted peanuts on top.
