Ingredients
  • 1 cup Red Lentils
  • 1 can Coconut Milk
  • 4 cup Vegetable Broth
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 tablespoon Red Curry Paste
  • 2 tablespoon Lime Juice
  • 1 tablespoon Fish Sauce (optional)
  • 1 teaspoon Salt
  • to taste for garnish Cilantro
Instructions
  1. Rinse the lentils and set aside.
  2. In a large pot, heat some oil over medium heat.
  3. Add the onion, garlic, and ginger. Sauté until fragrant.
  4. Stir in the red curry paste and cook for another minute.
  5. Add the lentils, coconut milk, and vegetable broth. Bring to a boil.
  6. Reduce heat and simmer for about 20-25 minutes, or until the lentils are tender.
  7. Stir in lime juice, fish sauce (if using), and salt.
  8. Remove from heat and let it rest for 5 minutes.
  9. Serve hot, garnished with cilantro.
