Ingredients
  • 2 cup Rice
  • 1 cup Lentils
  • 1 can Canned Tomatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 1 cup Mixed Vegetables
  • 2 cup Vegetable Stock
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
Instructions
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Add rice, lentils, canned tomatoes, mixed vegetables, vegetable stock, salt, black pepper, paprika, and cumin. Stir well.
  3. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes, or until the rice and lentils are cooked.
  4. Remove from heat and let it rest for 10 minutes.
  5. Serve hot and enjoy!
