Ingredients
  • 2 cup Peas
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 2 tablespoon Fresh mint leaves
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until softened.
  2. Add peas and vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Remove from heat and let cool slightly.
  4. Using a blender, puree the soup until smooth.
  5. Return the soup to the pot and reheat over low heat. Season with salt, black pepper, and lemon juice.
  6. Serve hot, garnished with fresh mint leaves.
