Ingredients
  • 2 pound Sweet Potatoes
  • 2 tablespoon Olive Oil
  • 2 tablespoon Maple Syrup
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 1 cup Pecans
  • 1 tablespoon Butter
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the sweet potatoes into 1-inch cubes.
  3. In a large bowl, toss the sweet potatoes with olive oil, maple syrup, cinnamon, and salt.
  4. Spread the sweet potatoes in a single layer on a baking sheet.
  5. Bake for 40-45 minutes, or until the sweet potatoes are tender and slightly caramelized.
  6. In a small skillet, melt the butter over medium heat.
  7. Add the pecans and cook for 3-4 minutes, until toasted.
