Ingredients
  • 500 gram Cauliflower
  • 1 piece Red bell pepper
  • 1 piece Red onion
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cut the cauliflower into small florets.
  2. Boil the cauliflower florets for 5 minutes, then drain and let cool.
  3. Dice the red bell pepper and red onion.
  4. In a large bowl, combine the cauliflower florets, red bell pepper, red onion, and fresh parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and black pepper.
  6. Pour the dressing over the cauliflower mixture and toss to coat.
  7. Let the salad marinate in the refrigerator for at least 1 hour before serving.
  8. Serve chilled and enjoy!
