  • 1 cup Quinoa
  • 8 pieces Falafel
  • 1 cup Cherry Tomatoes
  • 1 cup Cucumber
  • 1 small Red Onion
  • 0.5 cup Fresh Parsley
  • 0.5 cup Fresh Mint
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Cook the quinoa according to package instructions.
  2. Preheat the oven to 375°F (190°C).
  3. Place the falafel on a baking sheet and bake for 15-20 minutes until crispy.
  4. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, fresh parsley, and fresh mint.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  6. Pour the dressing over the quinoa salad and toss to combine.
  7. Allow the salad to rest for 10 minutes to let the flavors meld together.
