Ingredients
  • 1 cup Bulgur
  • 1 cup Fresh Parsley
  • 1/2 cup Fresh Mint
  • 1 cup Tomatoes
  • 1/2 cup Cucumber
  • 1/4 cup Green Onions
  • 1/4 cup Lemon Juice
  • 1/4 cup Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Instructions
  1. Place the bulgur in a bowl and cover with water. Let it soak for 10 minutes.
  2. Drain the bulgur and squeeze out any excess water.
  3. In a large bowl, combine the bulgur, parsley, mint, tomatoes, cucumber, and green onions.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled and enjoy!
