Ingredients
  • 500 gram Eggplants
  • 4 clove Garlic
  • 1 teaspoon Ginger
  • 2 tablespoon Soy Sauce
  • 1 teaspoon Szechuan Peppercorns
  • 1 tablespoon Chili Bean Paste
  • 1 teaspoon Sugar
  • 1 tablespoon Vinegar
  • 2 stalk Green Onions
  • 3 tablespoon Cooking Oil
Instructions
  1. Cut the eggplants into bite-sized pieces.
  2. Heat oil in a wok or pan and add garlic, ginger, and Szechuan peppercorns. Stir-fry for a minute.
  3. Add eggplants and stir-fry until they are slightly softened.
  4. Add chili bean paste, soy sauce, sugar, and vinegar. Stir-fry for another 2-3 minutes.
  5. Garnish with chopped green onions and serve hot.
