Ingredients
  • 8 ounce Kumquat
  • 1 cup White Beans
  • 2 medium Sweet Potato
  • 2 tablespoon Olive Oil
  • 1 medium Onion
  • 3 clove Garlic
  • 2 cup Vegetable Broth
  • 2 tablespoon Maple Syrup
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Fresh Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the kumquats in half and remove the seeds.
  3. In a large oven-safe skillet, heat olive oil over medium heat. Add onion and garlic, and cook until softened.
  4. Add kumquats, white beans, sweet potatoes, vegetable broth, maple syrup, Dijon mustard, fresh thyme, salt, and black pepper to the skillet. Stir well to combine.
  5. Cover the skillet and transfer to the preheated oven. Bake for 25-30 minutes, or until the sweet potatoes are tender.
  6. Remove from the oven and let it rest for 5 minutes before serving.
  7. Serve hot and enjoy!
