Ingredients
  • 200 gram Spinach
  • 300 gram Potato
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Nutmeg
Instructions
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic. Cook until onion is translucent.
  2. Add diced potatoes and vegetable broth to the pot. Bring to a boil and then reduce heat to simmer for 15 minutes or until potatoes are tender.
  3. Add spinach, coconut milk, salt, black pepper, and nutmeg to the pot. Stir well and cook for another 5 minutes.
  4. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
  5. Return the soup to the pot and heat over low heat for 5 minutes.
  6. Serve hot and garnish with a sprinkle of black pepper or a drizzle of coconut milk, if desired.
