Ingredients
  • 500 gram Mixed vegetables
  • 400 ml Coconut milk
  • 2 tablespoon Curry paste
  • 1 tablespoon Brown sugar
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 teaspoon Red chili flakes
  • 1 teaspoon Salt
  • 2 tablespoon Vegetable oil
  • 2 tablespoon Fresh cilantro
Instructions
  1. Heat vegetable oil in a pan and sauté garlic and ginger until fragrant.
  2. Add curry paste and red chili flakes, and cook for 1 minute.
  3. Add mixed vegetables and stir-fry for 2 minutes.
  4. Pour in coconut milk, soy sauce, lime juice, and brown sugar. Stir well.
  5. Cover and simmer for 15-20 minutes until the vegetables are tender.
  6. Season with salt to taste.
  7. Garnish with fresh cilantro.
  8. Serve hot with steamed rice or naan bread.
