Ingredients
  • 1 cup Quinoa
  • 2 cup Water
  • 1 medium Sweet Potato
  • 1 medium Red Bell Pepper
  • 1 medium Cucumber
  • 1 small Red Onion
  • 1 cup Fresh Parsley
  • 1/2 cup Dried Cranberries
  • 1/4 cup Pecans
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 1 tablespoon Maple Syrup
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Instructions
  1. Rinse quinoa under cold water and drain.
  2. In a medium saucepan, bring water to a boil. Add quinoa, cover, and simmer for 15-20 minutes until water is absorbed and quinoa is tender. Remove from heat and let it rest for 10 minutes.
  3. Meanwhile, peel and dice the sweet potato. Roast it in a preheated oven at 400°F (200°C) for about 20 minutes until tender.
  4. Chop the red bell pepper, cucumber, red onion, and fresh parsley.
  5. In a large bowl, combine cooked quinoa, roasted sweet potato, chopped vegetables, dried cranberries, and pecans.
  6. In a small bowl, whisk together lemon juice, olive oil, maple syrup, salt, and black pepper.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Serve the sweet quinoa salad chilled or at room temperature.
