Ingredients
  • 500 gram Sweet potatoes
  • 400 ml Coconut milk
  • 2 teaspoon Red curry paste
  • 250 ml Vegetable broth
  • 2 piece Bell peppers
  • 1 piece Onion
  • 3 piece Garlic cloves
  • 1 teaspoon Ginger
  • 2 tablespoon Lime juice
  • 1 tablespoon Soy sauce
  • 1 tablespoon Brown sugar
  • 1 teaspoon Salt
  • 20 gram Fresh cilantro
Instructions
  1. Peel and dice the sweet potatoes.
  2. In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.
  3. Add the red curry paste and cook for another minute.
  4. Add the sweet potatoes, bell peppers, coconut milk, and vegetable broth. Bring to a boil and then reduce heat to simmer for about 20 minutes or until the sweet potatoes are tender.
  5. Stir in the lime juice, soy sauce, brown sugar, and salt.
  6. Serve the curry over rice or noodles, garnished with fresh cilantro.
