Ingredients
  • 500 gram Sweet potatoes
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh cilantro
Instructions
  1. Peel and chop the sweet potatoes, onion, and garlic cloves.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic cloves, and sauté until they become translucent.
  3. Add the chopped sweet potatoes, vegetable broth, ground cumin, ground cinnamon, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the sweet potatoes are tender.
  4. Remove the pot from heat and let it cool slightly. Using an immersion blender or regular blender, blend the soup until smooth.
  5. Return the soup to the pot and stir in the coconut milk. Heat the soup over low heat until warmed through.
  6. Serve the sweet potato soup hot, garnished with fresh cilantro.
