Ingredients
  • 500 gram Sweet Potatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 tablespoon Olive Oil
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Peel and chop the sweet potatoes, onion, and garlic.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the onion and garlic, sauté until softened.
  4. Add the sweet potatoes, cumin, coriander, salt, and black pepper. Stir to coat the sweet potatoes with the spices.
  5. Pour in the vegetable stock and bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes or until the sweet potatoes are tender.
  7. Remove from heat and let it cool slightly.
  8. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  9. Return the soup to the pot, stir in the coconut milk, and heat over low heat until warmed through.
  10. Serve hot, garnished with fresh cilantro.
