Ingredients
  • 500 gram Sweet Potatoes
  • 100 gram Red Onion
  • 100 gram Red Bell Pepper
  • 15 gram Jalapeno Pepper
  • 20 gram Cilantro
  • 1 teaspoon Lime Juice
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cumin
  • 0.5 teaspoon Ground Black Pepper
Instructions
  1. Preheat the oven to 425 degrees F (220 degrees C). Peel and dice the sweet potatoes. Toss the sweet potatoes with olive oil, salt, and pepper. Spread the sweet potatoes on a baking sheet and roast for 20 minutes or until they are tender. Meanwhile, chop the onion, red bell pepper, jalapeno pepper, and cilantro. In a mixing bowl, combine the roasted sweet potatoes, chopped vegetables, lime juice, cumin, and black pepper. Mix well to combine. Let the salsa rest for 10 minutes before serving. Serve as a dip with tortilla chips or as a topping for tacos, burritos, or grilled meats.
