Ingredients
  • 400 gram Sweet potatoes
  • 1 cup Quinoa
  • 1 medium Onion
  • 2 clove Garlic
  • 1/2 cup Breadcrumbs
  • 1 large Egg
  • 1 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Cook the quinoa according to package instructions. Set aside.
  2. Peel and grate the sweet potatoes. Finely chop the onion and mince the garlic.
  3. In a large bowl, combine the cooked quinoa, grated sweet potatoes, chopped onion, minced garlic, breadcrumbs, egg, cumin, paprika, salt, and black pepper. Mix well.
  4. Shape the mixture into patties.
  5. Heat olive oil in a frying pan over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown.
  6. Remove from the pan and let them rest for 10 minutes before serving.
  7. Serve the sweet potato quinoa patties with your favorite sauce or toppings.
