Ingredients
  • 500 gram Sweet Potatoes
  • 150 gram Red Lentils
  • 100 gram Rice
  • 1 medium Onion
  • 2 clove Garlic Cloves
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Ground Coriander
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook for 5 minutes until softened.
  2. Add ground cumin, ground turmeric, and ground coriander. Stir well to coat the onions and garlic with the spices.
  3. Add diced sweet potatoes, red lentils, and rice. Stir to combine.
  4. Pour in vegetable stock and coconut milk. Season with salt and black pepper.
  5. Bring the soup to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until the sweet potatoes are tender.
  6. Remove from heat and let the soup rest for 10 minutes.
  7. Use an immersion blender or a regular blender to puree the soup until smooth.
  8. Serve hot, garnished with fresh cilantro.
