Ingredients
  • 2 cup Sweet potatoes
  • 1 cup Oats
  • 1/2 cup Almonds
  • 1/2 cup Pecans
  • 1/4 cup Dried cranberries
  • 2 tablespoon Maple syrup
  • 2 tablespoon Coconut oil
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Vanilla extract
  • 1 pinch Salt
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Peel and dice the sweet potatoes into small cubes.
  3. In a large mixing bowl, combine the oats, almonds, pecans, dried cranberries, maple syrup, coconut oil, cinnamon, vanilla extract, and salt.
  4. Add the diced sweet potatoes to the mixing bowl and mix well until all ingredients are evenly coated.
  5. Spread the mixture onto a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and the granola is golden brown.
  7. Remove from the oven and let it cool for 10 minutes.
  8. Serve the sweet potato granola with yogurt, milk, or as a topping for smoothie bowls.
