Sweet potatoes are a great source of vitamins A and C, as well as fiber.
This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 350°F (175°C).

Peel and dice the sweet potatoes into small cubes.

In a large mixing bowl, combine the oats, almonds, pecans, dried cranberries, maple syrup, coconut oil, cinnamon, vanilla extract, and salt.

Add the diced sweet potatoes to the mixing bowl and mix well until all ingredients are evenly coated.

Spread the mixture onto a baking sheet lined with parchment paper.

Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and the granola is golden brown.

Remove from the oven and let it cool for 10 minutes.

Serve the sweet potato granola with yogurt, milk, or as a topping for smoothie bowls.
