Ingredients
  • 500 gram Sweet Potatoes
  • 200 gram Spinach
  • 400 gram Chickpeas
  • 1 piece Onion
  • 3 clove Garlic
  • 1 teaspoon Ginger
  • 2 teaspoon Curry Powder
  • 1 cup Coconut Milk
  • 1 cup Vegetable Stock
  • 2 tablespoon Lime Juice
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoon Cilantro
Instructions
  1. Heat oil in a large pan and sauté the onion, garlic, and ginger until fragrant.
  2. Add the curry powder and cook for another minute.
  3. Add the sweet potatoes, chickpeas, spinach, coconut milk, and vegetable stock.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes or until the sweet potatoes are tender.
  5. Stir in lime juice, salt, and pepper.
  6. Serve hot, garnished with cilantro. Enjoy!
