  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mash the sweet potatoes until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  4. In another bowl, mix together the mashed sweet potatoes, vegetable oil, brown sugar, eggs, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped pecans.
  7. Pour the batter into a greased loaf pan or cake pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread/cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve.
