Ingredients
  • 600 gram Sweet Potatoes
  • 2 teaspoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 0.5 cup Red Onion
  • 0.5 cup Red Bell Pepper
  • 0.5 cup Corn Kernels
  • 0.5 cup Black Beans
  • 0.5 cup Cheddar Cheese
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the sweet potatoes. Cut them in half lengthwise.
  3. Place the sweet potato halves on a baking sheet, cut side up.
  4. Drizzle olive oil over the sweet potatoes and sprinkle with salt, black pepper, and garlic powder.
  5. Bake in the preheated oven for 30-40 minutes, or until the sweet potatoes are tender.
  6. While the sweet potatoes are baking, prepare the filling. Dice the red onion and red bell pepper.
  7. In a skillet, heat olive oil over medium heat. Add the diced red onion and red bell pepper. Cook until softened.
  8. Add corn kernels and black beans to the skillet and cook for another 3-4 minutes.
  9. Remove the sweet potatoes from the oven and let them cool slightly.
  10. Scoop out some of the flesh from each sweet potato half to create a hollow space.
  11. Fill each sweet potato boat with the vegetable mixture from the skillet.
  12. Top each sweet potato boat with shredded cheddar cheese.
  13. Return the sweet potato boats to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  14. Garnish with fresh cilantro before serving.
