Ingredients
  • 500 gram Sweet potatoes
  • 1 cup Salsa
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Cilantro
  • 2 tablespoon Lime juice
Instructions
  1. Peel and chop the sweet potatoes, onion, and garlic cloves.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the chopped onion and garlic cloves to the pot and sauté until fragrant.
  4. Add the sweet potatoes, cumin, paprika, salt, and pepper to the pot. Stir well to coat the sweet potatoes with the spices.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes, or until the sweet potatoes are tender.
  6. Remove the pot from heat and let it cool slightly.
  7. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  8. Return the soup to the pot and stir in the salsa, cilantro, and lime juice.
  9. Heat the soup over low heat until warmed through.
  10. Serve hot and garnish with additional cilantro, if desired.
